Hành tây bóc vỏ, cắt khoanh rồi cho vào tô, ngâm cùng giấm trong khoảng 15 phút cho bớt hăng.
Cho gà vào nồi luộc, cho gừng đập dập vào cho thơm. Luộc khoảng 20 đến 25 phút thì gà chín.
Đợi gà nguội thì lọc lấy thịt, xé miếng nhỏ.
Cho tỏi ớt băm, bột canh, nước cốt chanh vào chén, trộn đều.
Cho thịt gà, hành tây, 1/2 lượng rau răm vào tô to, rưới nước trộn gỏi. Dùng đũa hoặc đeo bao tay nilon trộn đều cho tất cả các nguyên liệu ngấm gia vị.
Cho gà bóp thấu ra đĩa, rắc 1/2 rau răm còn lại lên trên nữa là hoàn tất.
