Thịt kho mềm, béo ngậy, củ sen giòn sần sật và rất bùi. Cả hai thấm đượm gia vị nên rất đậm đà, ăn cùng cơm trắng sẽ ngon tuyệt. Tại sao lại không thử sự kết hợp của hai nguyên liệu này nhỉ?
Thịt đem rửa sạch, cho vào nồi đổ ngập nước rồi cho lên bếp đun sôi khoảng 2 phút. Chắt bỏ nước luộc thịt, rửa lại với nước lạnh cho sạch bọt bẩn.
Đem thái thịt thành những miếng dày cỡ 2cm. Ướp thịt với hành tím băm nhỏ, tiêu hạt, 1 thìa cà phê bột canh, 1 thìa cà phê hạt nêm. Củ sen rửa sạch, nạo bỏ vỏ, cắt miếng dày cỡ 1cm rồi ngâm vào bát nước cho củ sen khỏi bị thâm.
Phi thơm 1 ít hành băm nhỏ, cho thịt vào, thêm 2 thìa canh nước mắm, 1 ít đường thốt nốt, xào săn thịt rồi cho tiếp củ sen vào đảo qua ( Nếu dùng đường kính thì cho đường vào chảo, đun cho đường chuyển màu cánh gián rồi mới cho thịt vào đảo săn).
Đổ nước ngập mặt thịt, đun sôi, hạ lửa nhỏ ninh cho đến khi thịt chín thật mềm. Khi thịt chín mềm, nước cạn gần hết thì rắc hành hoa thái nhỏ vào rồi tắt bếp.
