Đu đủ chọn những trái còn tươi xanh những không quá non nhé! Đêm đu đủ rửa sạch, bào vỏ, bào thành những sợi nhỏ rồi đem rửa lại nhiều lần với nước cho sạch nhựa đu đủ. Trái thơm gọt vỏ, bỏ mắt, băm nhỏ.
Nấu một nồi nước sôi với chút muối. Cho đu đủ vào luộc 3 phút rồi đổ ra rổ. Ngâm ngay vào tô nước đá lạnh vài phút để đủ đủ không bị chín. Sau đó đổ ra rổ, xả qua nước lạnh vài lần, để ráo.
Cho đu đủ, thơm, 300g đường, nước cốt chanh 1 trái chanh và 1/4 muỗng cà phê muối vào chảo không dính trộn đều.
Chờ đường tan thì đặt lên bếp nấu lửa vừa 10 phút. Sau đó hạ lửa thấp tiếp tục nấu cho đến khi nước đường hơi sánh thì bạn bắt đầu dùng đũa sên nhẹ nhàng (khoảng 1-2 phút 1 lần). Cứ thế cho đến khi tất cả quyện thành 1 khối dẻo. Đu đủ trong veo thì tắt bếp.
