Gói rau câu bột chia làm 3 phần đều nhau. Trong gói rau câu, có 1 gói vị trái cây nhỏ, chia gói nhỏ này thành 3 phần đều nhau.
Trong một nồi nhỏ, cho vào 1/3 gói bột rau câu, 800 ml nước dừa, trộn đều cho bột rau câu tan. Sau đó đặt nồi rau câu lên bếp, để lửa lớn, khuấy nhẹ tay cho đến khi rau câu sôi đều, hạ lửa nhỏ, tiếp tục khuấy thêm 3 phút. Tắt lửa, cho vào nồi rau câu 1/3 gói vị trái cây, trộn đều. Đổ rau câu ra khuôn, cho vào tủ lạnh.
Tiếp tục cho 1/3 gói bột rau câu, 400 ml nước lọc, 400 ml nước cốt dừa, 100g đường và 1/8 muỗng cà phê muối vào nồi, trộn đều cho bột rau câu tan, sau đó bắt nồi rau câu lên bếp, để lửa lớn, khuấy nhẹ tay cho đến khi rau câu sôi đều, hạ lửa nhỏ, tiếp tục khuấy thêm 3 phút. Tắt lửa, cho vào nồi rau câu 1/3 gói vị trái cây, trộn đều. Khi lớp rau câu thứ nhất vừa đặc, chế phần rau câu màu trắng đục vừa nấu xong lên trên. Để khuôn rau câu vào tủ lạnh.
Tiếp tục cho 1/3 gói bột rau câu còn lại, 400 ml nước lọc, 400 ml nước cốt dừa, 100g đường, 1/8 muỗng cà phê muối và 1/2 muỗng cà phê tinh chất lá dứa vào nồi, trộn đều cho bột rau câu tan. Sau đó đặt nồi rau câu lên bếp, để lửa lớn, khuấy nhẹ tay cho đến khi rau câu sôi đều, hạ lửa nhỏ, tiếp tục khuấy thêm 3 phút. Tắt lửa, cho vào nồi rau câu 1/3 gói vị trái cây còn lại, trộn đều. Khi lớp rau câu thứ hai vừa đặc, chế phần rau câu màu xanh lá dứa vừa nấu xong lên trên. Để khuôn rau câu vào tủ lạnh.
Để rau câu trong tủ lạnh ít nhất 8 tiếng cho rau câu thật lạnh rồi cắt nhỏ là có thể dùng.
